poiler alert, my husband makes the BEST chicken salad in the world. There are even ingredients I don't like in it and I still don't want it made any other way. There's a perfect merriment of flavours and a beautiful crunch that goes along with it. It makes a great lunch either as a chicken salad salad or a chicken salad sandwich. You can pack it up for a road trip, pre-make it for your ski day, or enjoy it from the comfort of your home. My favourite item to add to this (and most things) is white cheddar cheese. Always remember some slices of coastal cheddar no matter the format in which you're going to eat this deliciousness. By the way, it lasts up to 5 days in the fridge - if it doesn't get gobbled up before that.

Now, there’s some chopping involved with this but I think you can handle it. If you’re against chopping, you can also try prepping it with this veggie chopper. For my personal taste, it doesn’t quite get the items chopped small enough, but you may be less particular than I am.

Chicken Salad

Ingredients

  • 1 whole roasted chicken – pulled/chopped into smaller pieces
  • 2 sticks of celery, dice
  • 1 pickle, diced
  • 1/2 cup mayo
  • 1/4 cup mustard
  • 1/4 cup ranch dressing
  • 1 tsp pepper
  • 2 tsp lemon juice
  • Salt to taste

Instructions

  1. Combine all ingredients into a large bowl and mix well 
  2. Make your favourite salad or sandwich and add the deliciousness you just mixed to it. 

That’s it – this may be the easiest recipe I’ve ever posted.
