Smoothie Day: Shrek Juice 2.0

Before McGregor and I met, I was a total smoothie queen. I loved all smoothies any time of day – in fact, I have two recipes on here. One smoothie is a refreshing pineapple mint smoothie, and the other is a wine smoothie. See, any time of day! They were my favourite thing to have rain, snow, or shine. A smoothie was always on my menu. When we started dating, I introduced him to my specialty – what he later called “Shrek juice” because of the bold green hue it produced.

The best part of Shrek juice was that it tasted nothing like it looked. There was no taste of “green,” but rather the pleasant taste of sweetness from the fruit. This smoothie recipe was simple – fill the blender halfway with spinach – really pack it in there – fill up the next 1/4 with apples, and the final 1/4 with oranges. I used coconut water to help make the blending process and not contribute to more natural sugars. But you could use juice. Both versions are refreshing and delicious.

McGregor has now taken over as the smoothie king and has made modifications to the original Shrek juice. Not sure if he’s done it for added flavour or additional health benefits but he’s done it. I will admit although I’m not quite the smoothie fiend I used to be, I do enjoy a good Shrek juice 2.0 on occasion. The best part is that Sloane does too.

Shrek Juice 2.0

If made in a Vitamix ~4 smoothies

Ingredients

  • Spinach – enough to pack half your blender
  • ginger 2 inch cube
  • 2 oranges, peeled
  • 2 apples, core removed
  • 2 carrots, tips cut off
  • 2 Tbsp ground flax seeds
  • 2 Tbsp hemp hearts
  • 2 Tbsp chia seeds
  • 1.5 cup coconut water
  • 1/2 cup juice (flavor of your juice)

Instructions

  1. Combine all ingredients into the blender. 
  2. Blend until smooth
  3. Add smoothies to glasses. 
  4. Good for 3-5 days in the fridge.
